Docker README.md is inconsistent

Description

To my severe frustration the README.md on how to deploy conduit as a docker container hass instructions that are very vague and inconsistent. Even following it step by step results in invalid type: found string "20_000_000", expected u32 for key "MAX_REQUEST_SIZE" in CONDUIT_ environment variable(s).
Not to mention that there's no guidance at all on how to use it with a conduit.toml file (am I supposed to copy it over to the container? where should it be located?). In the latter case I tried copying it to the container at /etc/matrix-conduit/conduit.toml but it just ends up being ignored by conduit.
Another problem I faced is that after I got it working 3 months ago last week the container crashed due to an OOM and the only useful guidelines I could find were upgrading to the latest version but there's no information on how to do that without losing all data such as accounts on the instance either.

Can the instructions please be updated? It shouldn't be a prerequisite to be an expert at docker to get conduit running in a container.
